Our 2019 Gaston Cabernet Sauvignon is a cornucopia of flavor, immediately transporting you to its harvest: dark fruit, tobacco, and wet granite captures the aroma of our caves during production. Chocolate covered tart cherries coupled with roasted espresso pop on the palate like a celebration. This is a full bodied wine with bold tannins that taper seamlessly into a silky and everlasting finish.
This flavorful and decadent vintage deserves only the most indulgent of pairings, and what is more emblematic of indulgence than a steak dinner? Last winter, we collaborated with The Culinary Vegetable Institute and Farmer Lee Jones on Episode 22 of The Wine Stream, culminating in a selection of Steak Night recipes developed by Chef Jamie Simpson of CVI.
In celebration of our 2019 Gaston, we are recognizing a selection of those recipes as perfect pairings for this wine. A Brasas At The Table NY Strip Steak from Genesee Valley Ranch complemented with an Herb Butter and Chopped Flowers, a decadent Creamed Spinach with poppy seeds and fragrant garlic, and Poached Beets with Mixed Micro Greens make up a whole (and wholly delicious) meal.
